You won’t believe how easy it is to prepare roasted artichokes, which doesn’t change the fact that they are one of the most delicious meals you can make. Just wrap and roll them!
- 4 large whole artichokes
- ¼ cup fresh lemon juice
- 4 cloves garlic
- Kosher salt
- ¼ cup olive oil
- Preheat your oven to 425 degrees F. Place the artichokes stem-side down in a bowl and spray them with lemon juice, then slightly separate the artichoke leaves with your hands.
- Insert a knife into the center of each artichoke to create a garlic clove-size space. Drizzle each artichoke with olive oil.
- Press one clove of garlic into the center of each artichoke and season with salt. Tightly wrap each artichoke twice with heavy-duty aluminum foil.
- Place in baking dish and bake in the preheated oven until they are sizzling, which shouldn’t take more than 1 hour and 20 minutes.
