Another hip and hot food, especially among vegans and vegetarians. Sometimes called “plant meat” or “wheat meat,” seitan is made of wheat gluten. Gluten is the main protein found in wheat and it is processed in a way that gives seitan a meat-like, stringy or fibery texture. This separates seitan from other common substitutes for meat like tofu or tempeh and makes it ideal for those who gave up meat but still crave it.
