Diabetes-Friendly Beef Casserole

This is a traditional beef casserole with a twist – it is diabetes friendly and even more nutritious since you will be adding lots of vegetables!

  • 850 g beef brisket
  • 2 celery sticks
  • 1 onion
  • 2 big carrots
  • 2 beef cubes
  • 3 sprigs thyme
  • 5 bay leaves
  • 1 tbsp vegetable oil
  • 1 tbsp butter
  • 2 tbsp tomato juice
  • 2 tbsp full grain flour


  1. Put the chopped onion, celery, bay, thyme, carrots, oil and butter in a pot, and let it soften for about 10 minutes.
  2. Add the flour, tomato juice and crumbled beef cubes to the pot.
  3. Gradually add 600 ml of hot water, beef, and let it simmer.
  4. Cover the pot and put it in the oven heated to 160°C for about 150 mins, after which you should uncover it and let it sit in the oven anywhere between 30 and 60 mins, until the meat is tender.
