Vegan Apple Carrot Muffins

These fat-free, vegan, low-cal muffins are just as delicious as they look. Not to mention that they are perfect for your vegan dietary needs and are tasty enough even for non-vegans to enjoy!

2 1/2 cups all-purpose flour

1 teaspoon baking powder

4 teaspoons baking soda

2 teaspoons salt

6 teaspoons egg replacer (dry)

1 1/4 cups applesauce

1 cup brown sugar

1/2 cup white sugar

4 teaspoons ground cinnamon

2 cups finely grated carrots

2 large apples – peeled, cored and shredded


  1. Preheat your oven to 375 degrees F, then grease your muffin cups.
  2. Mix the brown sugar, white sugar, baking soda, baking powder, flour, salt and cinnamon in a large bowl. Stir in the carrots and apple.
  3. Whisk together the egg substitute, oil and applesauce in a smaller bowl. Then mix it with the dry ingredients.
  4. Pour the batter into the prepared cups.
  5. Bake them in the oven for 20 minutes. Let the muffins cool down in the cups for 5 minutes before you remove them to cool completel
