  • 2 1/2 cups all-purpose flour
  • 2 tsp salt
  • 2 tsp olive oil
  • 2 tsp instant yeast
  • 1 cup warm water

  1. In a large bowl sprinkle the yeast over warm water.
  2. Stir until the yeast dissolves.
  3. Add two cups of flour, one cup at a time, and stir for about one minute in the same direction.
  4. Add the salt and olive oil and knead for about 5 minutes until the dough is smooth and elastic.
  5. Let the dough rest in a clean bowl covered with a dischcloth or a plastic wrap for 1-2 hours.
  6. After it’s rested gently trun the dough on a floured surface. Divide it into 8 equal pieces.
  7. Flatten each piece with a rolling pin into a circle. If the dough starst to stick, sprinkle it with a little extra flour.
  8. Warm a cast iron skillet over medium-high heat.
  9. Lay a rolled-out pita on the skillet and bake for 30 seconds. You’ll see bubbles starting to form.
  10. Flip the pita and cook for another minute on the other side.
