21. Being A Slave To Your Recipes

People who are just learning to cook are usually better off sticking with the recipes, the measures and the ingredients. They do not yet possess the skills to freestyle and modify the recipes on their own. On the other hand, if you have been cooking for some time now, you probably do not need to blindly stick to the recipes, especially when you go grocery shopping.

For instance, you have a nice dinner planned and the recipe calls for stuff like lime juice, cilantro and scallion (this is not from any recipe, although it might be, we don’t know).

You are at the grocery store, they are all out of limes and lime juice, their cilantro is all wilted and their scallions look as if they survived a nuclear blast. You can easily replace them with lemon juice, parsley and shallots. There is no need to buy subpar groceries. Don’t be afraid to freestyle.
